Raspberry Tart

This is a classic tart that is filled with berry purÃ©e and topped with fresh berries and glaze. You can make it with any other kind of berry that you like. Berry lovers will feel indulged from the first bite.

Ingredients
1 cup flour
90 g butter, cut into pieces
1 egg yolk
2/3 cup powder sugar
3/4 kg raspberries
1/2 tsp vanilla essence
1 pack jelly, any flavor

Directions
1. Making the tart crust
â�¢ Sift flour and 1/3 cup sugar in a bowl. Add butter and rub with your fingers until mixture looks like breadcrumbs.

â�¢ Add egg yolk, vanilla and 1 tbsp cold water and mix with your hands to form dough. Sprinkle little flour and wrap with plastic wrap then refrigerate for 30 minutes.

â�¢ Roll dough on a slightly floured surface and use to line the base and sides of a 34 x 10 cm fluted pan or its round equivalent. Trim the edges. Refrigerate for 20 minutes.

â�¢ Heat oven to 180 C. Line pastry with baking paper and sprinkle some rice or dried beans over paper. Bake pie in oven for 15-20 minutes. Remove baking paper and rice and bake for another 15 minutes. Leave to cool.

2. Making filling and serving
â�¢ Mash 250 g of raspberries with remaining powdered sugar or blend them. Spread over prepared pie crust before serving. Arrange remaining raspberries on top to cover pie surface.

â�¢ Heat jelly in a small saucepan until it melts completely. Leave to cool. Brush raspberries with cooled jelly to coat well.

Note: You can make this tart with any kind of berries that you like (strawberries, cherries, blue berries, etc). Just replace raspberries with your favorite berry and follow the steps as stated.

Tip: Putting baking paper and dried beans or uncooked rice over tart crust adds weight over pastry to prevent it from rising during baking.

Carrot Cake

This cake was only recently introduced to us, but it rapidly gained popularity. Now you can find it served in all coffee shops and pastry shops. The cream cheese frosting gives it an extremely rich taste.

1 1/2 cups Pineapple Juice

2 cups Flour
1 tsp Cinnamon
pinch Salt
3 tbsp Baking Powder
1 1/4 tsp Vanilla
2 cups Sugar

Directions

Heat oven to 175 C. Grease and flour a 22.5 x 33 cm baking dish.
In a large bowl, combine grated carrots, flour, white sugar, baking powder, salt and cinnamon. Add eggs, oil, vanilla, pineapple juice and nuts. Beat until well combined, and then pour dough into baking dish.
Bake in preheated oven for 30 to 40 minutes or until a knife comes out clean when inserted in the middle of cake. Serve topped with cream cheese frosting.

Tip

Never open the oven door before about 30 minutes from inserting the cake in oven to allow cake to rise and increase in volume.

Bananas and Coconut CrÃªpe

This is a very easy and delicious recipe for crÃªpe. The coconut together with bananas enriches the flavor and the dish looks very nice, too.

1 cup Flour
1 1/3 cups milk
1 egg
1/2 tsp vanilla
60 g butter
1/4 cup coconut
4 bananas, medium size, diagonally sliced
1/3 cup brown sugar
1/3 cup lemon juice, or lime juice

Directions

1-Preparing crÃªpe
â�¢ In a medium bowl, mix flour, coconut, milk, eggs and vanilla. Whisk well until mixture is smooth with no clumps.
â�¢ In a small non-stick skillet, melt Â½ tsp butter over low heat. Add Â¼ cup from milk and flour mixture and spread all over skillet. Leave until bottom is golden.
â�¢ Flip to cook the other side until golden. Remove and put on a platter. Repeat the process until you finish all quantity of mixture, arranging crÃªpe over each other on the platter. You shall have about 8 crÃªpe. Cover and set aside until needed.

2-Preparing filling and serving
â�¢ In a large skillet, melt remaining butter over medium heat. Add banana slices and cook until bananas start to soften.
â�¢ Add brown sugar and leave until it melts shaking skillet occasionally. Add lemon or lime juice and leave for about 1 minute. Take off heat and set aside.
â�¢ Put 2-3 tbsp of banana filling on one side of each crÃªpe. Fold the other side over filling. Sprinkle some coconut on the surface.

500 g dark chocolate, broken into pieces
4 eggs, beaten
250 g butter
1/2 cup cocoa powder
2 tbsp vegetable oil
2 1/2 cups flour
1/2 tsp baking soda
2 tbsp instant coffee
2/3 cup sugar
2 1/2 cups sugar
1/2 cup double cream
1/2 cup buttermilk

Directions
1. In a saucepan, heat butter, instant coffee, Â½ quantity of chocolate and Â¾ cup water over low heat until butter and chocolate melt and mixture is smooth.

2. Sift flour, cocoa powder and baking soda in a bowl. Stir in 2 Â½ cups sugar then add eggs, buttermilk and oil. Stir all ingredients together using a spoon. Add melted chocolate mix and mix until well combined.

3. Heat oven to 160 C. Butter a 23 cm baking pan. Pour batter in pan and bake for 1 hour and 40-50 minutes or until a knife comes out clean when inserted in the middle of cake. Remove from oven and leave to cool completely. Remove from pan and leave to cool on a wired rack.

4. In a small saucepan, put remaining chocolate, cream and 2/3 cup sugar. Heat over low heat until chocolate melts and bring to boil. Reduce heat and simmer for 5 minutes. Remove from heat and leave to cool.

5. Put cake on a serving platter and coat top and sides evenly with chocolate glaze. Decorate in any way you like.

2 packs Biscuits,(Mary or Digestive), cut into small pieces
1 pack Jelly ,lemon or pineapple
1 pack Whipping Cream, powder
150 g Butter ,softened
2 packs Cream Cheese,(8 squares each)
2 tbsp Water
Strawberry Jam,or bleuberry or blackberry

Directions

Mix biscuits and butter in a food processor over medium speed until they blend well.
Grease a 26 cm cheesecake pan or any equivalent baking pan, then press biscuit mixture evenly to cover the bottom. Freeze for 1 hour.
In a bowl stir cheese in water until soft, add jelly and whipped cream powders. Beat with an electric beater until well combined and smooth.
Remove baking pan from freezer and layer cheese mix on top. Refrigerate for another 1 hour.
To serve: dilute jam in a small amount of water. Arrange strawberries on surface in a nice shape then use diluted jam as topping.
